Appointed Executive Chef
At Pine Cliffs Resort in Algarve, Portugal
Pine Cliffs, A Luxury Collection Resort in Algarve, has appointed Stuart Sage as Executive Chef to oversee the resort’s 11 restaurants and bars. Sage will foster the development of a diverse range of gastronomic concepts, from locally-inspired cuisine at Pescador, to healthy dining at Zest to one of the region’s finest steak houses, Piri Piri.
Bringing a wealth of experience in managing restaurant teams to the fore, Sage will mentor the head chefs at each restaurant, nurturing their culinary talent, providing expert guidance on menu development and advising on techniques to elevate dishes to the next level.
With a modern approach to cuisine, Sage will also implement a series of new initiatives such as the installation of temperature-controlled sous-vide machines to create flavourful, nutritious dishes. Working closely with each chef, he also plans to launch fully adaptable menus that cater to today’s health-conscious consumer, including allergen-sensitive dishes and children’s menus that include homemade, local fare.
With an illustrious career working in fine-dining restaurants and five-star hotels, Stuart brings over 24 years of experience to the role. He joins Pine Cliffs following a position as Executive Chef at Sheraton Dubai Creek Hotel Towers where he oversaw the development of the hotels’ six dining outlets and in-room dining as well as the recruitment and training of all FB staff. Prior to this, he was Executive Chef at the immensely successful Atmosphere Restaurant, Burj Khalifa. He has also worked in the kitchens of The Address Montgomerie, Le Meridien, Tang Restaurant at Le Meridien Mina Seyahi Beach Resort Marina in Dubai and the Michelin-starred Rain Restaurant in Amsterdam, Holland.
